Prepare the fillingIn a medium bowl, combine the Monterey Jack and cheddar cheeses. If using chicken, mix it with the ground cumin and chili powder in a separate bowl.

Assemble the quesadillasLay out 4 tortillas on a clean work surface. Sprinkle an even layer of the cheese mixture over each tortilla, leaving about a 1/2-inch border around the edges. If using, distribute the seasoned chicken, diced bell pepper, red onion, and cilantro evenly over the cheese.

Complete the assemblyPlace the remaining 4 tortillas on top of the filled tortillas, pressing down gently to secure the fillings.

Cook the quesadillasHeat a large skillet over medium heat. Add 1/2 tablespoon of oil to the pan. When the oil is hot, carefully transfer one quesadilla to the skillet. Cook until the bottom is golden brown and crispy, about 2-3 minutes.

Flip and finish cookingUsing a large spatula, carefully flip the quesadilla and cook the other side until golden brown and the cheese is completely melted, about 2 minutes more. Transfer to a cutting board.

Repeat the cooking processRepeat the cooking process with the remaining quesadillas, adding more oil to the pan as needed.

Cut and serveLet each quesadilla rest for 1 minute before cutting into quarters or sixths using a pizza cutter or sharp knife. Serve immediately with sour cream, guacamole, and salsa on the side.
