  1. Prepare the filling
    In a medium bowl, combine the Monterey Jack and cheddar cheeses. If using chicken, mix it with the ground cumin and chili powder in a separate bowl.
  2. Assemble the quesadillas
    Lay out 4 tortillas on a clean work surface. Sprinkle an even layer of the cheese mixture over each tortilla, leaving about a 1/2-inch border around the edges. If using, distribute the seasoned chicken, diced bell pepper, red onion, and cilantro evenly over the cheese.
  3. Complete the assembly
    Place the remaining 4 tortillas on top of the filled tortillas, pressing down gently to secure the fillings.
  4. Cook the quesadillas
    Heat a large skillet over medium heat. Add 1/2 tablespoon of oil to the pan. When the oil is hot, carefully transfer one quesadilla to the skillet. Cook until the bottom is golden brown and crispy, about 2-3 minutes.
  5. Flip and finish cooking
    Using a large spatula, carefully flip the quesadilla and cook the other side until golden brown and the cheese is completely melted, about 2 minutes more. Transfer to a cutting board.
  6. Repeat the cooking process
    Repeat the cooking process with the remaining quesadillas, adding more oil to the pan as needed.
  7. Cut and serve
    Let each quesadilla rest for 1 minute before cutting into quarters or sixths using a pizza cutter or sharp knife. Serve immediately with sour cream, guacamole, and salsa on the side.
