  1. Prepare the beef
    Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 3-4 minutes until softened. Add minced garlic and cook for another 30 seconds until fragrant. Add ground beef and break it apart with a wooden spoon. Cook for 6-7 minutes until browned and no longer pink.
  2. Season the meat
    Drain excess fat if necessary. Sprinkle taco seasoning over the beef and stir to coat evenly. Add 1/4 cup water, stir, and simmer for 2-3 minutes until the liquid has reduced and the beef is well-seasoned. Remove from heat and set aside.
  3. Assemble the base
    Preheat oven to 375°F (190°C). On a large, oven-safe platter or baking sheet, spread tortilla chips in an even layer. Dollop refried beans over the chips, then sprinkle with half of the shredded cheese.
  4. Add the beef layer
    Distribute the seasoned beef mixture evenly over the chips and cheese. Sprinkle the remaining cheese on top to cover the beef.
  5. Bake until melted
    Place the nachos in the preheated oven and bake for 5-7 minutes, until the cheese is completely melted and bubbly. Watch carefully to prevent burning.
  6. Add the fresh toppings
    Remove nachos from the oven and immediately top with pico de gallo, diced avocado or guacamole, dollops of sour cream, sliced jalapeños, and fresh cilantro.
  7. Serve immediately
    Serve the nachos right away while they're still hot and the cheese is melted. For easy sharing, place the platter in the center of the table with small plates for guests.
