Instructions

  1. Cook the beef
In a large skillet over medium-high heat, brown the ground beef for about 5-7 minutes, breaking it apart with a wooden spoon until no longer pink. Drain excess fat if necessary.
  2. Season the meat
Add the taco seasoning and water to the skillet with the beef. Stir well to combine. Reduce heat to medium-low and simmer for 5 minutes until the liquid has mostly evaporated and the meat is well coated with seasoning. Remove from heat and let cool slightly.
  3. Prepare the vegetables
While the beef is cooking, wash and chop the romaine lettuce. Prepare the tomatoes, corn, avocado, and red onion. Rinse and drain the black beans. Place all prepared vegetables in separate bowls or on a cutting board.
  4. Assemble the base layer
In a large serving bowl or on individual plates, create a bed of romaine lettuce. Arrange black beans and corn over the lettuce.
  5. Add the beef and toppings
Spoon the seasoned ground beef over the vegetables. Top with cherry tomatoes, diced avocado, red onion, and shredded cheddar cheese. Sprinkle with chopped cilantro.
  6. Finish with garnishes
Add crushed tortilla chips around the edges of the salad. Dollop sour cream on top or serve on the side. Garnish with lime wedges for squeezing over the salad just before eating.
