  1. Prepare the grill
    Preheat your grill to medium-high heat (about 375-450°F). Make sure the grates are clean and well-oiled to prevent sticking.
  2. Make the herb butter
    In a small bowl, combine the softened butter, chopped herbs, minced garlic, lime zest, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Mix thoroughly until well combined. Set aside at room temperature.
  3. Prepare the corn
    Brush each ear of corn with olive oil and season evenly with the remaining salt, pepper, and smoked paprika if using. Make sure all sides of the corn are coated.
  4. Grill the corn
    Place the corn directly on the grill grates. Close the lid and grill for 8-10 minutes, turning every 2-3 minutes to ensure even charring on all sides. The kernels should be tender and have some charred spots when done.
  5. Apply the herb butter
    Remove the corn from the grill and immediately brush with the prepared herb butter, making sure to cover all sides. The heat from the corn will melt the butter and help the flavors absorb.
  6. Serve
    Transfer the buttered corn to a serving platter. Garnish with additional herbs if desired and serve with lime wedges for squeezing over the top. Enjoy while hot!
