  1. Prepare the corn
    After grilling the corn until lightly charred, let it cool slightly. Hold each cob upright on a cutting board and carefully slice off the kernels using a sharp knife. You should have approximately 3 cups of grilled corn kernels.
  2. Mix the dry ingredients
    In a large bowl, whisk together the flour, cornmeal, baking powder, salt, black pepper, and smoked paprika until well combined.
  3. Combine wet and dry ingredients
    In a separate bowl, mix the beaten eggs and milk. Pour this mixture into the dry ingredients and stir until just combined. Fold in the corn kernels, chopped chives, and diced red bell pepper. Be careful not to overmix; a few lumps are fine.
  4. Cook the fritters
    Heat the vegetable oil in a large skillet over medium heat. When the oil is hot (a drop of batter should sizzle immediately), drop heaping tablespoons of the batter into the pan, flattening slightly with the back of a spoon. Cook for 2-3 minutes per side until golden brown and crispy. Work in batches to avoid overcrowding the pan.
  5. Drain and serve
    Transfer the cooked fritters to a paper towel-lined plate to drain excess oil. Serve immediately while hot and crispy, with a dollop of sour cream if desired.
