  1. Prepare the potatoes
    Place the peeled and cut potatoes in a large pot and cover with cold water by about 1 inch. Add 1 teaspoon of salt to the water. Bring to a boil over high heat, then reduce to a simmer and cook until the potatoes are fork-tender, about 15-20 minutes.
  2. Drain and dry
    Drain the potatoes thoroughly in a colander. Return the empty pot to low heat for 30 seconds to evaporate any remaining moisture. Return the drained potatoes to the dry pot and allow them to steam for 1-2 minutes. This helps create fluffier mashed potatoes.
  3. Add butter and dairy
    Add the butter to the potatoes and mash using a potato masher or ricer until mostly smooth. Gradually add the warm milk and cream, continuing to mash until you reach your desired consistency. If using, add the minced garlic now.
  4. Season the potatoes
    Add salt, pepper, and optional nutmeg to taste. If using sour cream, fold it in gently for added richness. Continue to mash until potatoes are smooth and creamy, but be careful not to overmix as this can make potatoes gummy.
  5. Serve and garnish
    Transfer the mashed potatoes to a serving bowl. Create a small well in the center and add an extra pat of butter if desired. Sprinkle with freshly chopped chives and serve immediately while hot.
