
Beef Burritos
Juicy seasoned beef with rice and beans wrapped in a warm tortilla

Prepare the beef mixtureHeat olive oil in a large skillet over medium-high heat. Add diced onion and sauté for 3-4 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant. Add ground beef and break it apart with a wooden spoon, cooking for 5-7 minutes until browned.

Season and finish the fillingStir in the diced red bell pepper and taco seasoning. Cook for 2 minutes, then add the drained black beans. Reduce heat to low and simmer for 5 minutes, allowing the flavors to combine. Remove from heat and set aside.

Warm the tortillasHeat the flour tortillas in a dry skillet for about 30 seconds on each side, or wrap them in slightly damp paper towels and microwave for 30 seconds until warm and pliable.

Assemble the burritosLay a warm tortilla flat on a clean work surface. Spread 1/4 cup of cooked rice in the center, leaving about 2 inches from the edge. Top with about 1/2 cup of the beef and bean mixture. Add shredded cheese, a dollop of sour cream, and avocado slices or mashed avocado.

Fold and rollFold in the sides of the tortilla, then fold up the bottom edge over the filling. Holding the sides in, roll the tortilla up tightly to form a burrito. Repeat with remaining tortillas and fillings.

Sear the burritos (optional)For a crispy exterior, place the assembled burritos seam-side down in a dry skillet over medium heat. Cook for 1-2 minutes on each side until golden brown and crispy.

Serve and garnishCut the burritos in half diagonally if desired and arrange on plates. Serve with additional salsa, sour cream, and chopped cilantro on the side.
