
Beef and Bean Chili

Brown the beefHeat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until no longer pink, about 8-10 minutes. Transfer to a plate using a slotted spoon, leaving the fat in the pot.

Sauté the aromaticsAdd the diced onions and bell pepper to the pot. Cook until softened, about 5-6 minutes. Add the minced garlic and cook until fragrant, about 30 seconds.

Add the spicesStir in the chili powder, cumin, oregano, and tomato paste. Cook, stirring constantly, for 1-2 minutes until the spices are fragrant and the tomato paste darkens slightly.

Combine and simmerReturn the browned beef to the pot. Add the crushed tomatoes, kidney beans, pinto beans, and beef broth. Season with salt and pepper. Bring to a boil, then reduce heat to low and simmer, partially covered, stirring occasionally.

Cook until thickenedSimmer the chili for at least 1 hour, preferably 1 hour and 30 minutes, until the flavors have melded and the chili has thickened. If it gets too thick, add a little more beef broth or water.

Final seasoningTaste and adjust seasonings as needed, adding more salt, pepper, or chili powder according to your preference. For a spicier chili, you can add a pinch of cayenne pepper.
