Prepare the meatIn a large pot, add the ground beef and 2 cups of water. Bring to a simmer over medium heat, stirring frequently to break the beef into very small pieces. Continue to simmer for about 30 minutes until the meat is thoroughly cooked.

Add base ingredientsAdd half of the chopped onions to the pot (reserving the other half for topping). Stir in the beef broth, tomato sauce, and apple cider vinegar. Bring back to a simmer.

Add spicesAdd the cocoa powder, chili powder, cinnamon, allspice, cloves, salt, and bay leaf to the pot. Stir well to combine all ingredients. Reduce heat to low and simmer uncovered for 2 hours, stirring occasionally. The chili should thicken considerably.

Prepare the toppingsWhile the chili is simmering, cook the spaghetti according to package directions. Drain and set aside. Prepare the toppings: shredded cheddar cheese, remaining chopped onions, and kidney beans.

Serve Cincinnati styleTo serve Cincinnati-style, layer in the following order: spaghetti on the bottom (known as 'one-way'), chili on top of spaghetti ('two-way'), add shredded cheddar cheese ('three-way'), add chopped onions ('four-way'), and finally top with kidney beans ('five-way').

Final adjustmentsRemove the bay leaf before serving. If the chili is too thick, add a little water or broth to reach your desired consistency. If it's too thin, simmer a bit longer to reduce the liquid.
