    Heat vegetable oil in a large skillet over medium-high heat. Add the chorizo, breaking it up with a wooden spoon. Cook for about 8-10 minutes until fully browned and slightly crispy. Drain excess fat if necessary.
  2. Prepare the tortillas
    While the chorizo is cooking, warm the corn tortillas. Either wrap them in a damp paper towel and microwave for 30 seconds, or heat them individually in a dry skillet for about 30 seconds per side until soft and pliable.
  3. Prepare the toppings
    Arrange all toppings in separate bowls: diced onion, chopped cilantro, lime wedges, sliced avocado, crumbled cotija cheese, jalapeño slices, and radish slices.
  4. Assemble the tacos
    Place a spoonful of cooked chorizo in the center of each warm tortilla. Top with your desired combination of onions, cilantro, jalapeños, radishes, and cotija cheese.
  5. Add finishing touches
    Garnish each taco with avocado slices, a squeeze of lime juice, and a sprinkle of salt and pepper to taste.
  6. Serve immediately
    Arrange the tacos on a serving platter with extra lime wedges and any remaining toppings on the side. Serve hot while the tortillas are still warm and soft.
