  1. Cook the meat
    Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the breakfast sausage or chorizo and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5-6 minutes. Transfer to a plate lined with paper towels to drain excess fat.
  2. Sauté the vegetables
    In the same skillet, add the remaining oil if needed. Add the diced onion and bell pepper, cooking until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Scramble the eggs
    Pour the beaten eggs into the skillet with the vegetables. Season with salt and pepper. Cook, stirring gently, until the eggs are just set but still slightly creamy, about 2-3 minutes. Remove from heat and stir in the cooked meat.
  4. Warm the tortillas
    Warm the tortillas in a dry skillet for about 30 seconds per side, or wrap them in a damp paper towel and microwave for 30 seconds. Keep warm by wrapping in a clean kitchen towel.
  5. Assemble the tacos
    Spoon the egg mixture onto each warm tortilla. Top with shredded cheese, sliced avocado, fresh cilantro, and salsa. Serve immediately while still warm.
