  1. Prepare the eggs
    In a medium bowl, whisk the eggs with salt and pepper until well combined. Melt butter in a large non-stick skillet over medium heat. Pour in the eggs and cook, stirring occasionally, until soft scrambled but not dry, about 3-4 minutes. Remove from heat.
  2. Assemble the quesadillas
    Lay 4 tortillas flat on a clean work surface. Distribute the scrambled eggs evenly among them. Sprinkle with cooked sausage, bacon pieces, diced bell pepper, and green onions. Top each with 1/2 cup of shredded cheddar cheese, ensuring the ingredients are spread evenly to the edges.
  3. Complete the quesadillas
    Place the remaining 4 tortillas on top of the filled ones, pressing down gently to seal. Heat a large skillet over medium heat (or use a quesadilla maker if available).
  4. Cook the quesadillas
    Carefully transfer one quesadilla to the heated skillet. Cook until golden brown and crispy on the bottom, about 2-3 minutes. Carefully flip and cook the other side until the cheese is fully melted and the tortilla is golden brown, another 2 minutes. Repeat with remaining quesadillas.
  5. Serve
    Transfer the cooked quesadillas to a cutting board and let rest for 1 minute. Cut each quesadilla into quarters using a sharp knife or pizza cutter. Serve immediately with sliced avocado, salsa, and sour cream on the side.
