Prepare the potatoesHeat olive oil in a large cast-iron skillet over medium-high heat. Add diced potatoes and season with salt and pepper. Cook undisturbed for 5 minutes to develop a crispy bottom, then stir and continue cooking for another 5-7 minutes until golden brown and tender.

Cook the meatAdd the breakfast sausage or bacon to the skillet with the potatoes. Cook until the meat begins to brown, about 3-4 minutes, stirring occasionally to break up the meat.

Add vegetablesAdd the diced onion and bell pepper to the skillet. Cook for 5 minutes until vegetables have softened. Add minced garlic, smoked paprika, and dried thyme. Stir to combine and cook for another minute until fragrant.

Create wells and add eggsUsing a spoon, create 4 wells in the hash mixture. Crack an egg into each well. Season eggs with salt and pepper. Cover the skillet and cook for 3-5 minutes until egg whites are set but yolks are still runny (or cook longer for firmer yolks).

Add cheese and garnishIf using cheese, sprinkle it over the hash and cover for 1 minute to melt. Garnish with fresh chives or green onions before serving. Serve hot, directly from the skillet for a rustic presentation.
