  1. Cook the meat
    Heat a large skillet over medium heat. Add the breakfast sausage or chorizo and cook for 5-7 minutes, breaking it up with a wooden spoon until browned and cooked through. Transfer to a paper towel-lined plate to drain excess fat.
  2. Sauté the vegetables
    In the same skillet, add 1 tablespoon of oil if needed. Add the diced potatoes, bell pepper, and onion. Season with salt, pepper, and garlic powder. Cook for 5-6 minutes until the vegetables are soft and potatoes are golden brown and crispy.
  3. Prepare the eggs
    In a bowl, whisk together the eggs and milk until well combined. Lower the heat to medium-low and pour the egg mixture into the skillet with the vegetables. Gently stir and fold the eggs until they're just set but still slightly moist, about 3-4 minutes.
  4. Add the meat and cheese
    Return the cooked sausage to the skillet and stir to combine with the egg mixture. Sprinkle the shredded cheese over the top and stir gently until the cheese begins to melt. Remove from heat.
  5. Warm the tortillas
    Heat the tortillas in a dry skillet for 10-15 seconds per side or microwave for 10 seconds to make them pliable. Keep them covered with a clean kitchen towel to stay warm.
  6. Assemble the burritos
    Lay a warm tortilla flat on a work surface. Spoon about 1/4 of the egg mixture onto the lower third of the tortilla. Fold the bottom edge up over the filling, fold in the sides, and roll up tightly to form a burrito. Repeat with remaining tortillas and filling.
  7. Toast the burritos (optional)
    For an extra crispy exterior, return the assembled burritos to a dry skillet over medium heat. Cook for 1-2 minutes per side until golden brown and crispy.
  8. Serve and garnish
    Serve the breakfast burritos immediately with sour cream, salsa, and avocado or guacamole on the side. You can also wrap them in foil to keep warm or to take on the go.
