  1. Prepare the dry ingredients
    In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. Mix the wet ingredients
    In a separate medium bowl, beat the eggs, then whisk in the milk, melted butter, and vanilla extract until smooth.
  3. Combine the batter
    Pour the wet ingredients into the dry ingredients and stir gently just until combined. Some small lumps are fine - do not overmix or the pancakes will be tough.
  4. Heat the griddle
    Heat a large non-stick skillet or griddle over medium heat. Add a small amount of oil or butter to coat the surface.
  5. Cook the pancakes
    For each pancake, pour about 1/4 cup of batter onto the hot griddle. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  6. Flip and finish cooking
    Flip the pancakes with a spatula and cook until golden brown on the second side, about 1-2 minutes more. Transfer to a warm plate and repeat with remaining batter.
  7. Serve
    Stack the pancakes on plates, drizzle generously with warm maple syrup, and garnish with fresh berries if desired. Serve immediately while hot.
