Ingredients
Instructions
-
Prepare the batterIn a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using). In a separate bowl, combine the mashed bananas, milk, eggs, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir just until combined. A few lumps are okay - don't overmix.
-
Heat the cooking surfaceHeat a griddle or large non-stick skillet over medium heat. Add a small amount of vegetable oil or butter to lightly coat the surface. The pan is ready when a few drops of water sprinkled on the surface dance and evaporate quickly.
-
Cook the pancakesFor each pancake, pour about 1/4 cup of batter onto the hot griddle. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip the pancakes with a spatula and cook until golden brown on the other side, about 1-2 minutes more.
-
Keep warm and repeatTransfer cooked pancakes to a plate and cover loosely with foil to keep warm, or place in a 200°F (95°C) oven. Add more oil to the pan as needed and repeat with the remaining batter.
-
Serve and garnishServe the pancakes warm, stacked on plates. Drizzle with maple syrup and garnish with additional banana slices or a sprinkle of cinnamon if desired.
