  1. Prepare the batter
    In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using). In a separate bowl, combine the mashed bananas, milk, eggs, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir just until combined. A few lumps are okay - don't overmix.
  2. Heat the cooking surface
    Heat a griddle or large non-stick skillet over medium heat. Add a small amount of vegetable oil or butter to lightly coat the surface. The pan is ready when a few drops of water sprinkled on the surface dance and evaporate quickly.
  3. Cook the pancakes
    For each pancake, pour about 1/4 cup of batter onto the hot griddle. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip the pancakes with a spatula and cook until golden brown on the other side, about 1-2 minutes more.
  4. Keep warm and repeat
    Transfer cooked pancakes to a plate and cover loosely with foil to keep warm, or place in a 200°F (95°C) oven. Add more oil to the pan as needed and repeat with the remaining batter.
  5. Serve and garnish
    Serve the pancakes warm, stacked on plates. Drizzle with maple syrup and garnish with additional banana slices or a sprinkle of cinnamon if desired.
