Instructions

  1. Prepare the dry ingredients
In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. Mix the wet ingredients
In a separate medium bowl, beat the eggs, then add milk, melted butter, and vanilla extract. Whisk until smooth and fully incorporated.
  3. Combine and add chocolate chips
Pour the wet ingredients into the dry ingredients and stir gently with a wooden spoon until just combined. Small lumps are okay – do not overmix. Gently fold in the chocolate chips, distributing them evenly throughout the batter.
  4. Rest the batter
Allow the batter to rest for about 5 minutes. This helps the flour absorb the liquid and results in fluffier pancakes.
  5. Cook the pancakes
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour 1/4 cup of batter for each pancake onto the hot surface. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  6. Flip and finish cooking
Carefully flip each pancake and cook for another 1-2 minutes until golden brown and cooked through. Transfer to a warm plate and repeat with the remaining batter, adjusting heat as necessary to prevent burning.
  7. Serve warm
Stack the pancakes on serving plates. Drizzle with maple syrup and garnish with fresh berries if desired. Serve immediately while still warm and the chocolate chips are melty.
