Mix the wet ingredientsIn a separate bowl, whisk the egg yolks, milk, melted butter, and vanilla extract until smooth. Pour this mixture into the dry ingredients and stir until just combined. Some small lumps are okay.

Beat the egg whitesIn another clean bowl, beat the egg whites with an electric mixer until stiff peaks form, about 3-4 minutes. Gently fold the beaten egg whites into the batter using a rubber spatula, being careful not to deflate the whites too much. This will ensure light and airy waffles.

Preheat the waffle ironPreheat your Belgian waffle iron according to the manufacturer's instructions. Most waffle irons have a light that indicates when they're ready to use. Lightly grease the waffle iron with cooking spray or brush with melted butter.

Cook the wafflesPour about 3/4 cup of batter onto the center of the preheated waffle iron (amount may vary depending on your waffle iron size). Close the lid and cook until golden brown and crisp, about 4-5 minutes. The waffle should release easily from the iron when done.
