
Whole Wheat Belgian Waffles

Prepare the dry ingredientsIn a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, brown sugar, baking powder, salt, and cinnamon (if using) until well combined.

Mix the wet ingredientsIn a separate medium bowl, whisk together the egg yolks, milk, vegetable oil, and vanilla extract until smooth. Pour this mixture into the dry ingredients and stir just until moistened. Some lumps are okay.

Beat the egg whitesIn another clean bowl, beat the egg whites with an electric mixer until stiff peaks form, about 2-3 minutes. Gently fold the beaten egg whites into the batter using a rubber spatula, being careful not to deflate the whites too much. This will create a lighter, fluffier waffle.

Preheat and prepare waffle ironPreheat your Belgian waffle iron according to manufacturer's instructions. Lightly coat with cooking spray or brush with a small amount of oil to prevent sticking.

Cook the wafflesPour approximately 3/4 cup of batter onto the preheated waffle iron (amount may vary depending on your waffle maker). Close the lid and cook until the waffle is golden brown and crisp, about 3-5 minutes or until the steaming stops. Repeat with remaining batter.

Serve immediatelyTransfer cooked waffles to a plate and serve immediately with fresh berries and warm maple syrup. If making multiple batches, keep cooked waffles warm in a 200°F (95°C) oven on a baking sheet until ready to serve.
