  1. Prepare the noodles
    Bring a large pot of water to a boil. Add the somen noodles and cook according to package instructions, usually 2-3 minutes. Do not overcook as they will become mushy.
  2. Cool the noodles
    Drain the noodles in a colander and immediately rinse under cold running water. Gently swish them around to remove excess starch and to cool them completely. Drain well.
  3. Prepare the dipping sauce
    Dilute the mentsuyu according to package instructions (typically 1 part mentsuyu to 3 parts water). Pour into individual serving bowls and refrigerate until ready to serve.
  4. Prepare garnishes
    Arrange the green onions, grated ginger, nori strips, sesame seeds, daikon radish, and cucumber slices in separate small dishes.
  5. Assemble and serve
    Divide the cooled somen noodles among four plates or bowls. Sprinkle each serving with tenkasu (tempura bits) and some of the prepared garnishes. Serve with the chilled mentsuyu dipping sauce on the side, allowing each person to add their preferred garnishes.
