Prepare the spice bundlePlace the whole cloves, allspice berries, and cracked nutmeg in a small piece of cheesecloth. Tie it securely with kitchen twine to create a spice sachet. This makes it easier to remove the whole spices later.

Combine ingredientsIn a large pot or Dutch oven, pour in the apple cider or juice. Add the cinnamon sticks, spice sachet, sliced ginger, cardamom, orange slices, and lemon slices.

Simmer the ciderBring the mixture to a simmer over medium heat. As soon as it begins to simmer, reduce the heat to low. Do not let it boil, as this can affect the flavor. Simmer gently for 25-30 minutes, allowing the spices to infuse the cider.

Add sweetener if desiredAfter simmering, taste the cider. If you prefer it sweeter, stir in the maple syrup until dissolved. Remember that apple cider is naturally sweet, so adjust according to taste.

Strain and serveRemove the spice sachet, cinnamon sticks, ginger slices, and citrus fruits with a slotted spoon. For a clearer cider, strain the entire mixture through a fine-mesh sieve. Return it to the pot to keep warm for serving.

Add optional alcoholFor an adult version, add the rum or bourbon after removing the cider from the heat. Stir well to combine. You can also let guests add their own spirits to individual servings if preferred.
