  1. Prepare the citrus
    Wash the orange and lemon thoroughly. Slice them into thin rounds, removing any seeds. Set aside a few slices for garnish if desired.
  2. Combine ingredients
    In a large, non-aluminum pot, combine the wine, sliced orange, lemon, cinnamon sticks, cloves, star anise, cardamom pods, ginger, and nutmeg. Add the orange zest strips.
  3. Heat gently
    Warm the mixture over medium-low heat until it begins to steam, about 5-7 minutes. Do not allow it to boil as this will cook off the alcohol and create a bitter taste.
  4. Add sweetener
    Stir in the honey or sugar until completely dissolved. Adjust sweetness to taste.
  5. Infuse the flavors
    Reduce heat to low and let the wine simmer (not boil) for 15 minutes to allow the spices to infuse. The longer it simmers, the more pronounced the spice flavors will become.
  6. Add spirits (optional)
    If using, stir in the brandy or orange liqueur for an extra warming effect.
  7. Strain and serve
    Using a fine-mesh strainer, strain the mulled wine into a heat-resistant serving bowl or directly into mugs. Garnish each serving with a cinnamon stick and orange slice if desired.
