  1. Prepare the apples
    In a medium saucepan, melt the butter over medium heat. Add the diced apples, 1 teaspoon of cinnamon, and 1 tablespoon of maple syrup. Cook for 3-4 minutes until apples begin to soften but still maintain some firmness. Remove half the apples and set aside for topping.
  2. Cook the oats
    To the saucepan with the remaining apples, add milk, rolled oats, salt, and the remaining cinnamon, nutmeg, and ginger. Stir well to combine. Bring the mixture to a gentle boil, then reduce heat to low.
  3. Simmer until creamy
    Simmer the oatmeal for 8-10 minutes, stirring occasionally to prevent sticking, until the oats are tender and the mixture has thickened to your desired consistency. For thinner oatmeal, add a splash more milk.
  4. Finish and flavor
    Remove from heat and stir in the vanilla extract and remaining maple syrup. Taste and adjust sweetness if needed by adding more maple syrup or honey.
  5. Serve and garnish
    Divide the oatmeal between four bowls. Top each serving with the reserved cooked apples, a sprinkle of chopped nuts, a dusting of additional cinnamon, and a drizzle of maple syrup or honey. Add a sprinkle of brown sugar if desired.
