  1. Prepare the spice mixture
    In a medium saucepan, combine water, cinnamon stick pieces, crushed cardamom pods, cloves, star anise, sliced ginger, and black peppercorns. Bring the mixture to a boil over high heat, then reduce heat to low and simmer for 5 minutes to release the flavors of the spices.
  2. Add the tea
    Add the tea bags or loose tea to the spiced water. Allow to steep for 3-4 minutes until the tea becomes dark and fragrant. If using loose tea, strain the mixture through a fine mesh sieve to remove the tea leaves and spices, then return the liquid to the saucepan.
  3. Incorporate the milk
    Add the milk to the tea mixture and heat gently over medium-low heat until steaming, but not boiling. Boiling can cause the milk to separate and affect the smoothness of your chai latte. Stir occasionally to prevent a skin from forming on top.
  4. Sweeten the chai
    Add honey or sugar to taste, stirring until completely dissolved. If using, add the vanilla extract for an additional layer of flavor. The sweetness should balance the spices without overpowering them.
  5. Froth and serve
    For a traditional chai latte texture, use a handheld frother to create a light foam on top of the mixture. Alternatively, vigorously whisk the chai until slightly frothy. Pour into preheated mugs, sprinkle with ground cinnamon, and serve immediately while hot.
