  1. Sift the matcha
    Using a fine mesh strainer, sift the matcha powder into a small bowl or mug to remove any clumps. This ensures a smooth texture in your final latte.
  2. Create a matcha paste
    Add the hot water (not boiling) to the sifted matcha and whisk vigorously in a zigzag motion using a bamboo whisk (chasen) or small regular whisk until frothy and no lumps remain. This should take about 30-45 seconds.
  3. Heat the milk
    In a small saucepan, heat the milk over medium heat until steaming but not boiling (about 150°F/65°C). Alternatively, microwave it for 60-90 seconds. If using sweetener and vanilla, stir them into the warm milk.
  4. Froth the milk
    Using a milk frother, handheld frother, or by vigorously whisking, create foam with the warm milk. If you have a French press, you can also pump the plunger up and down with the hot milk to create foam.
  5. Combine and serve
    Pour the frothed milk into the matcha mixture. Hold back the foam with a spoon and let the milk pour in first, then spoon the foam on top. For an iced version, pour the matcha mixture over ice cubes, then add cold milk.
  6. Finish and garnish
    Dust the top with a small amount of matcha powder as garnish if desired. Serve immediately while hot (or cold for iced version).
