Cream butter and sugarIn a large bowl, use an electric mixer to beat the softened butter and sugar together until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, and beat until fully incorporated and smooth.

Combine wet and dry ingredientsGradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix. Fold in the white chocolate chips and pistachios (if using) with a spatula.

Shape the cookiesCover the dough and refrigerate for 30 minutes. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper. Scoop rounded tablespoons of dough and roll into balls. Place on the prepared baking sheets, leaving about 2 inches between each cookie.
