Prepare the ingredientsPreheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. Toast the sesame seeds in a dry skillet over medium heat until golden, about 3-5 minutes, stirring frequently to prevent burning. Set aside to cool.

Make the cookie doughIn a large bowl, cream together the butter and sugar until light and fluffy. Add the egg, tahini, vanilla extract, and honey, and mix until well combined. In a separate bowl, whisk together the flour, baking powder, and salt.

Combine wet and dry ingredientsGradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. If the dough seems too dry, add the tablespoon of milk. The dough should be soft but not sticky.

Shape the cookiesTake about 1 tablespoon of dough and roll it into a ball. Roll each ball in the toasted sesame seeds, pressing gently to ensure they stick. Place the cookies on the prepared baking sheets, spacing them about 2 inches apart. Slightly flatten each cookie with the palm of your hand.

Bake the cookiesBake in the preheated oven for 12-15 minutes, or until the edges are golden brown. The centers will still be soft but will firm up as they cool. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
