  1. Prepare the ginger
    Peel the ginger root using the edge of a spoon and slice it thinly to maximize the surface area. The thinner the slices, the more flavor will be extracted.
  2. Boil the water
    In a small saucepan, bring the water to a boil over high heat. Once boiling, add the sliced ginger and any optional spices (cinnamon stick, cardamom pods, cloves, star anise).
  3. Simmer the tea
    Reduce the heat to low and simmer the mixture for 5-10 minutes. The longer you simmer, the stronger the ginger flavor will be. For a more intense tea, cover the pot while simmering.
  4. Strain and serve
    Remove from heat and strain the tea into cups using a fine mesh strainer or cheesecloth. Add honey and lemon juice to taste, stirring until the honey is completely dissolved.
