  1. Prepare the lemongrass
    Remove the outer tough layers of the lemongrass stalks. Using the back of a knife, bruise the lemongrass to release its oils and then cut into 3-inch pieces.
  2. Prepare the ginger
    Slice the ginger thinly without peeling. For a stronger flavor, you can lightly crush the slices with the side of your knife.
  3. Simmer the base
    In a medium saucepan, combine water, lemongrass, ginger, cinnamon sticks, and star anise. Bring to a boil, then reduce heat and simmer gently for 10 minutes, allowing the flavors to infuse.
  4. Add optional tea
    If using green tea, remove the pot from heat and add the tea bags. Allow to steep for 3 minutes, then remove the tea bags to prevent bitterness.
  5. Sweeten and flavor
    Stir in the honey until dissolved. Add the fresh lime juice and mint leaves, allowing them to infuse for 1-2 minutes.
  6. Strain and serve
    Strain the tea through a fine-mesh sieve into a teapot or directly into mugs. Garnish each serving with a fresh mint leaf and a slice of lime. Serve hot or pour over ice for a refreshing cold version.
