  1. Prepare the pineapple
    Peel and core the pineapple, then slice it into 1-inch thick rings. Pat the pineapple rings dry with paper towels to remove excess moisture, which helps with caramelization.
  2. Make the miso caramel
    In a small saucepan over medium heat, melt the butter. Add brown sugar and stir until dissolved, about 2 minutes. Whisk in the miso paste until fully incorporated, then add honey, rice vinegar, vanilla extract, and sea salt. Simmer for 3-4 minutes until slightly thickened, then remove from heat.
  3. Prepare the grill
    Heat a grill or grill pan to medium-high heat. Brush the grates with oil to prevent sticking. Alternatively, you can use a cast-iron skillet over medium-high heat.
  4. Grill the pineapple
    Brush both sides of the pineapple rings with the miso caramel sauce, reserving some for serving. Grill the pineapple for 2-3 minutes on each side until caramelized with distinct grill marks. Brush with more sauce halfway through cooking.
  5. Finish and serve
    Transfer the grilled pineapple to serving plates. Drizzle with the remaining miso caramel sauce, sprinkle with toasted sesame seeds, and garnish with fresh mint leaves. Serve warm, with a scoop of vanilla ice cream if desired.
