Prepare the watermelonCut the watermelon into 1-inch thick slices, then cut each slice into triangles or rectangles. Pat the watermelon pieces dry with paper towels to remove excess moisture - this helps with caramelization during grilling.

Make the miso honey glazeIn a small bowl, whisk together the white miso paste, honey, rice vinegar, soy sauce, sesame oil, lime juice, lime zest, and grated ginger until smooth and well combined. Set aside.

Preheat the grillHeat a grill or grill pan to high heat. Brush the grates with vegetable oil to prevent sticking. Alternatively, you can use a cast-iron skillet over high heat.
