  1. Prepare the watermelon
    Cut the watermelon into 1-inch thick slices, then cut each slice into triangles or rectangles. Pat the watermelon pieces dry with paper towels to remove excess moisture - this helps with caramelization during grilling.
  2. Make the miso honey glaze
    In a small bowl, whisk together the white miso paste, honey, rice vinegar, soy sauce, sesame oil, lime juice, lime zest, and grated ginger until smooth and well combined. Set aside.
  3. Preheat the grill
    Heat a grill or grill pan to high heat. Brush the grates with vegetable oil to prevent sticking. Alternatively, you can use a cast-iron skillet over high heat.
  4. Grill the watermelon
    Place the watermelon pieces on the hot grill and cook for 2-3 minutes per side until grill marks appear and the watermelon begins to caramelize. Be careful not to overcook, as the watermelon will become too soft.
  5. Apply the glaze
    Brush the grilled watermelon with the miso honey glaze on both sides, then return to the grill for an additional 30 seconds per side to allow the glaze to caramelize slightly and adhere to the watermelon.
  6. Serve and garnish
    Transfer the grilled watermelon to a serving platter. Drizzle with any remaining glaze, then sprinkle with toasted sesame seeds, fresh mint leaves, and sliced scallions. Serve immediately while still warm.
