Prepare the sweet potatoesPreheat the oven to 425°F (220°C). Peel the sweet potatoes and cut them into 1-inch cubes. Place them in a large mixing bowl.

Season the potatoesIn a small bowl, mix the olive oil, cumin, smoked paprika, cinnamon, cayenne (if using), and sea salt. Pour this mixture over the sweet potatoes and toss until they're evenly coated.

Roast the sweet potatoesSpread the seasoned sweet potatoes in a single layer on a large baking sheet lined with parchment paper. Roast in the preheated oven for 30-35 minutes, flipping halfway through, until the potatoes are tender and caramelized on the edges.

Prepare the tahini sauceWhile the potatoes are roasting, whisk together the tahini paste, lemon juice, maple syrup or honey, and minced garlic in a medium bowl. Gradually add the warm water, one tablespoon at a time, while whisking until the sauce reaches a smooth, pourable consistency.

Assemble the dishTransfer the roasted sweet potatoes to a serving dish. Drizzle generously with the tahini sauce, making sure to cover most of the potatoes. Sprinkle with the fresh parsley and toasted sesame seeds.
