Instructions

  1. Prepare the miso butter
In a small bowl, combine the softened butter, miso paste, mirin, sake, soy sauce, and honey. Mix until smooth and well incorporated. Set aside.
  2. Heat the skillet
Place a large skillet over medium-high heat. Once hot, add 1 tablespoon of the miso butter mixture to the pan and allow it to melt.
  3. Sauté the corn
Add the fresh corn kernels to the hot skillet. Sauté for about 5-7 minutes, stirring occasionally, until the corn begins to caramelize slightly and becomes tender but still maintains some crunch.
  4. Add the miso butter
Reduce heat to medium-low and add the remaining miso butter mixture to the skillet. Stir continuously for 2-3 minutes until the corn is evenly coated and the sauce has thickened slightly.
  5. Incorporate the ginger
Add the grated ginger to the corn and stir for an additional 30 seconds until fragrant.
  6. Finish and garnish
Remove the skillet from heat. Transfer the miso butter corn to a serving dish and garnish with sliced green onions, toasted sesame seeds, and shichimi togarashi if using.
