Prepare the fruitsArrange the pear, peach, and plum wedges in a large, heatproof baking dish. Sprinkle with 1 tablespoon of lemon juice to prevent browning and set aside.

Make the caramel baseIn a medium saucepan, combine the sugar and water. Heat over medium heat without stirring until the sugar dissolves and turns amber-colored, about 8-10 minutes. Watch carefully to prevent burning.

Create the black sesame caramelOnce the caramel reaches a deep amber color, carefully add the butter and whisk until melted. Remove from heat and slowly add the heavy cream while whisking constantly (mixture will bubble vigorously). Stir in the black sesame paste, toasted sesame seeds, vanilla extract, remaining lemon juice, and sea salt until smooth.

Coat the fruitsPour the hot black sesame caramel over the prepared fruits, gently tossing to ensure all pieces are coated evenly.
