  1. Prepare the miso glaze
    In a small bowl, whisk together the white miso paste, mirin, rice vinegar, honey, and sesame oil until smooth. Set aside to allow flavors to meld while you prepare the mangoes.
  2. Prepare the mangoes
    Select ripe but firm mangoes. Peel the mangoes and cut the flesh away from the pit. Slice the mango into thick slices, about 1/2 inch thick. Pat the mango slices dry with paper towels to remove excess moisture.
  3. Heat the pan
    Heat a large non-stick skillet over medium-high heat. Add the vegetable oil and swirl to coat the bottom of the pan. Once the oil is hot but not smoking, carefully add the mango slices in a single layer, working in batches if necessary to avoid overcrowding.
  4. Sear the mango slices
    Cook the mango slices for 2-3 minutes on each side until they develop a golden caramelized exterior. Be gentle when flipping to keep the slices intact. Transfer the seared mango slices to a plate.
  5. Glaze the mangoes
    Return the mango slices to the pan over low heat. Brush or spoon the miso glaze generously over each mango slice. Cook for another 1-2 minutes, turning once, until the glaze is bubbling and begins to caramelize. Be careful not to burn the glaze as the sugars can caramelize quickly.
  6. Garnish and serve
    Transfer the glazed mango slices to a serving plate. Sprinkle with toasted sesame seeds and sliced scallions. Serve immediately with lime wedges on the side for squeezing over the mangoes just before eating.
