  1. Prepare the tofu
    Cut the pressed tofu into 8 equal rectangles, about 1/2 inch thick. Place them on a paper towel-lined plate to remove any excess moisture while you prepare the glaze.
  2. Make the miso glaze
    In a small bowl, whisk together the miso paste, mirin, rice vinegar, soy sauce, sesame oil, maple syrup, grated ginger, and minced garlic until well combined and smooth.
  3. Marinate the tofu
    Place the tofu pieces in a shallow dish and pour half of the miso glaze over them. Turn the pieces to coat evenly. Allow to marinate for at least 15 minutes, or up to 4 hours in the refrigerator for more flavor. Reserve the remaining glaze for serving.
  4. Cook the tofu
    Heat the vegetable oil in a large non-stick skillet over medium-high heat. Once hot, add the marinated tofu pieces and cook for 3-4 minutes on each side until golden brown and crispy. Work in batches if necessary to avoid overcrowding the pan.
  5. Glaze while cooking
    During the last minute of cooking, brush the tops of the tofu with some of the reserved miso glaze, flip, and cook for another 30 seconds. Brush the other side and cook for a final 30 seconds until the glaze is caramelized but not burnt.
  6. Serve
    Transfer the glazed tofu to a serving plate. Drizzle with the remaining miso glaze, and garnish with sliced green onions and toasted sesame seeds. Serve immediately with steamed rice and vegetables if desired.
