  1. Prepare the tofu
    Cut the pressed tofu into 1-inch cubes. Pat dry with paper towels to remove excess moisture. The drier the tofu, the crispier it will get when cooked.
  2. Create the coating
    In a medium bowl, combine cornstarch, 1/4 teaspoon white pepper, 1/2 teaspoon salt, and five-spice powder (if using). Toss the tofu cubes in this mixture until they are evenly coated on all sides.
  3. Fry the tofu
    Heat vegetable oil in a large non-stick pan or wok over medium-high heat. When the oil is hot, add the coated tofu cubes in a single layer (you may need to do this in batches). Fry for 3-4 minutes on each side until golden brown and crispy. Transfer to a paper towel-lined plate.
  4. Prepare the aromatics
    In the same pan, add a little more oil if needed. Add minced garlic and cook for 30 seconds until fragrant. Add sliced green onions and chili (if using), and stir-fry for another 30 seconds.
  5. Season and finish
    Return the fried tofu to the pan. Sprinkle with the remaining white pepper, black pepper, and salt. Add soy sauce if using. Toss everything together quickly over high heat for about 1 minute to coat the tofu with all the flavors.
  6. Serve
    Transfer to a serving plate and garnish with additional sliced green onions if desired. Serve immediately while hot and crispy, as a side dish or with steamed rice.
