
General Tso's Tofu
Crispy tofu in a sweet, spicy and tangy sauce

Prepare the tofuPress the tofu between paper towels with a heavy object for 30 minutes to remove excess moisture. Cut into 1-inch cubes and toss with 2 tablespoons cornstarch, ensuring all pieces are evenly coated.

Fry the tofuHeat 1/2 inch of vegetable oil in a large skillet over medium-high heat. When oil is hot (350°F/175°C), carefully add the coated tofu cubes and fry until golden brown and crispy on all sides, about 5-7 minutes. Remove with a slotted spoon and place on paper towels to drain.

Prepare the sauceIn a small bowl, whisk together soy sauce, rice vinegar, brown sugar, vegetable broth, and the remaining 1 tablespoon cornstarch until smooth.

Cook the aromaticsIn a clean wok or large skillet, heat 2 tablespoons vegetable oil over medium heat. Add minced garlic, grated ginger, and dried chilies. Stir-fry for 30 seconds until fragrant, being careful not to burn the garlic.

Finish the saucePour the sauce mixture into the wok and bring to a simmer. Cook, stirring frequently, until the sauce thickens and becomes glossy, about 2-3 minutes. Add the sesame oil and stir to combine.

Combine and serveAdd the fried tofu to the sauce and toss gently to coat. Cook for another minute to heat through. Sprinkle with sliced green onions and toasted sesame seeds. Serve immediately over steamed rice.
