  1. Prepare the plantains
    Preheat oven to 400°F (200°C). Cut the ends off each plantain, then slice through the skin lengthwise. Remove the skin and cut each plantain diagonally into 1-inch thick slices.
  2. Roast the plantains
    Place the plantain slices on a baking sheet lined with parchment paper. Brush both sides with 2 tablespoons of oil and sprinkle with salt. Roast for 15 minutes until they begin to caramelize and become tender.
  3. Prepare the shoyu caramel
    While the plantains are roasting, heat a small saucepan over medium heat. Add the remaining tablespoon of oil, garlic, and ginger. Sauté for 30 seconds until fragrant. Add the shoyu, brown sugar, butter, rice vinegar, and red pepper flakes if using. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the mixture thickens to a syrupy consistency.
  4. Glaze the plantains
    Remove the plantains from the oven and brush them generously with half of the shoyu caramel. Return to the oven and roast for another 5-7 minutes until the glaze begins to bubble and caramelize.
  5. Final touches
    Transfer the roasted plantains to a serving plate. Drizzle with the remaining shoyu caramel sauce, then sprinkle with sesame seeds and sliced green onions. Serve immediately while still warm.
