Make the miso glazeWhile the sweet potatoes are roasting, whisk together the miso paste, maple syrup, rice vinegar, soy sauce, grated ginger, minced garlic, and sesame oil in a small bowl until smooth and well combined.

Apply the glazeAfter the initial 20 minutes of roasting, remove the sweet potatoes from the oven. Drizzle the miso glaze evenly over the potatoes and gently toss to coat all pieces.
