  2. Prepare the sweet potatoes
    Toss the sweet potato chunks with vegetable oil and a pinch of salt. Spread them in a single layer on the prepared baking sheet, ensuring they're not overcrowded.
  3. Roast the sweet potatoes
    Place the baking sheet in the preheated oven and roast for 20 minutes, or until the potatoes are starting to soften and brown on the edges.
  4. Make the miso glaze
    While the sweet potatoes are roasting, whisk together the miso paste, maple syrup, rice vinegar, soy sauce, grated ginger, minced garlic, and sesame oil in a small bowl until smooth and well combined.
  5. Apply the glaze
    After the initial 20 minutes of roasting, remove the sweet potatoes from the oven. Drizzle the miso glaze evenly over the potatoes and gently toss to coat all pieces.
  6. Finish roasting
    Return the glazed sweet potatoes to the oven and continue roasting for an additional 10-15 minutes, or until the potatoes are tender and the glaze is caramelized and slightly sticky.
  7. Garnish and serve
    Transfer the miso glazed sweet potatoes to a serving dish. Sprinkle with sliced green onions, toasted sesame seeds, and red pepper flakes if using. Serve immediately while hot.
