Prepare the Brussels sproutsTrim the ends off the Brussels sprouts and remove any yellowed or damaged outer leaves. Cut them in half lengthwise. Rinse under cold water and pat dry thoroughly with paper towels.

Preheat the ovenPreheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or aluminum foil for easier cleanup.

Season and roast the sproutsIn a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper. Arrange them in a single layer on the prepared baking sheet, cut side down. Roast for 15-20 minutes until the edges begin to caramelize and they're tender when pierced with a fork.

Prepare the honey soy glazeWhile the sprouts are roasting, make the glaze. In a small saucepan over medium heat, combine soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, and red pepper flakes if using. Bring to a simmer and cook for about 5 minutes until slightly reduced and thickened.

Glaze the Brussels sproutsWhen the Brussels sprouts are roasted, transfer them to a large bowl. Pour the honey soy glaze over the hot sprouts and toss until evenly coated. Return the glazed sprouts to the baking sheet and roast for an additional 3-5 minutes until the glaze is caramelized.
