  1. Prepare the carrots
    Preheat your oven to 400°F (200°C). Peel the carrots and cut them into 2-inch sticks of even thickness to ensure uniform cooking. Place them in a large mixing bowl.
  2. Create the glaze
    In a small bowl, whisk together the olive oil, honey, toasted sesame oil, ground ginger, cinnamon (if using), salt, and pepper until well combined. Pour this mixture over the carrots and toss until all pieces are evenly coated.
  3. Roast the carrots
    Spread the coated carrots in a single layer on a large baking sheet. Make sure they aren't overcrowded to allow proper caramelization. Roast in the preheated oven for 20 minutes, turning halfway through cooking time.
  4. Add sesame seeds
