  1. Prepare the peaches
    Wash the peaches thoroughly. Cut each peach in half along the natural seam and gently twist to separate the halves. Remove the pits and place the halves cut-side up on a baking sheet.
  2. Make the miso glaze
    In a small bowl, whisk together the white miso paste, honey, rice vinegar, soy sauce, melted butter, and grated ginger until smooth and well combined. The mixture should have a thick but brushable consistency.
  3. Prepare the grill
    Preheat your grill to medium-high heat (about 375-400°F). Brush the grill grates with vegetable oil to prevent sticking. Alternatively, you can use a grill pan on the stovetop over medium-high heat.
  4. Grill the peaches
    Place the peach halves cut-side down on the grill and cook for about 3-4 minutes until grill marks appear and the peaches begin to soften slightly. Flip the peaches over so the cut sides are facing up.
  5. Apply the glaze
    Brush the cut side of each peach generously with the miso glaze. Continue grilling for another 3-4 minutes until the peaches are tender but not mushy and the glaze begins to caramelize.
  6. Finish and serve
    Remove the peaches from the grill and transfer to a serving platter. Drizzle with any remaining glaze and lime juice. Sprinkle with toasted sesame seeds and fresh mint leaves. Serve warm as a dessert or side dish.
