Prepare the skewersThread banana chunks onto the pre-soaked wooden skewers, about 4-5 pieces per skewer. Place them on a parchment-lined baking sheet and set aside.

Make the miso caramelIn a medium saucepan over medium heat, melt the butter. Add the brown sugar and stir until dissolved, about 2-3 minutes. Whisk in the miso paste until well incorporated, then slowly add the heavy cream while stirring continuously to prevent clumping.

Finish the sauceAdd the vanilla extract, sea salt, and rice vinegar to the caramel mixture. Allow the sauce to simmer for 2-3 minutes until it thickens slightly. Remove from heat and let cool for 5 minutes so it thickens further.

Brush and broilPreheat your broiler. Generously brush the banana skewers with the miso caramel sauce, coating all sides. Place under the broiler for 2-3 minutes, watching carefully to prevent burning, until the caramel begins to bubble and slightly darken.

Final glazingRemove the skewers from the broiler, flip them over, and brush with more miso caramel sauce. Return to the broiler for another 1-2 minutes until caramelized.
