  1. Prepare the skewers
    Thread banana chunks onto the pre-soaked wooden skewers, about 4-5 pieces per skewer. Place them on a parchment-lined baking sheet and set aside.
  2. Make the miso caramel
    In a medium saucepan over medium heat, melt the butter. Add the brown sugar and stir until dissolved, about 2-3 minutes. Whisk in the miso paste until well incorporated, then slowly add the heavy cream while stirring continuously to prevent clumping.
  3. Finish the sauce
    Add the vanilla extract, sea salt, and rice vinegar to the caramel mixture. Allow the sauce to simmer for 2-3 minutes until it thickens slightly. Remove from heat and let cool for 5 minutes so it thickens further.
  4. Brush and broil
    Preheat your broiler. Generously brush the banana skewers with the miso caramel sauce, coating all sides. Place under the broiler for 2-3 minutes, watching carefully to prevent burning, until the caramel begins to bubble and slightly darken.
  5. Final glazing
    Remove the skewers from the broiler, flip them over, and brush with more miso caramel sauce. Return to the broiler for another 1-2 minutes until caramelized.
  6. Garnish and serve
    Remove the skewers from the broiler and immediately sprinkle with toasted sesame seeds. Drizzle with the remaining miso caramel sauce and serve warm as a dessert or sweet appetizer.
