Instructions

  1. Prepare the garlic
If using raw garlic, mince it finely. For a milder flavor, you can sauté the minced garlic in 1 teaspoon of olive oil over low heat for 2-3 minutes until fragrant but not browned. Allow to cool completely before proceeding.
  2. Combine base ingredients
In a medium bowl, whisk together the mayonnaise, Greek yogurt, and olive oil until smooth and well combined.
  3. Add flavorings
Add the garlic, lemon juice, Dijon mustard, Worcestershire sauce, and anchovy paste (if using). Whisk until all ingredients are thoroughly incorporated.
  4. Mix in herbs and seasonings
Stir in the chopped parsley, dill (if using), black pepper, and salt. Taste and adjust seasonings as needed, adding more salt, pepper, or lemon juice to balance the flavors.
  5. Rest the dressing
Cover the dressing and refrigerate for at least 30 minutes before serving to allow the flavors to meld together. The dressing will thicken slightly when chilled.
  6. Adjust consistency
If the dressing is too thick after refrigeration, thin it with 1-2 tablespoons of water or milk until it reaches your desired consistency. Whisk well after each addition.
