
Chicken Tikka Masala Quesadillas

Prepare the chicken fillingIn a medium bowl, combine the diced chicken with tikka masala sauce, garam masala, and ground cumin. Mix well to ensure all chicken pieces are evenly coated with the spices and sauce.

Sauté the vegetablesHeat 1 tablespoon of oil in a skillet over medium heat. Add the diced red onion and bell peppers, cooking for 3-4 minutes until softened but still slightly crisp. Remove from heat and set aside.

Assemble the quesadillasLay out 4 tortillas on a clean surface. Divide the chicken mixture evenly among them, spreading it to cover half of each tortilla. Top with the sautéed vegetables, sprinkle with cheese, and add some fresh cilantro. Fold the empty half of each tortilla over the filling to create a half-moon shape.

Cook the quesadillasHeat the remaining oil in a large skillet over medium heat. Cook each quesadilla for 2-3 minutes per side, until the tortilla is golden brown and the cheese is melted. Work in batches if necessary, adding more oil as needed.

Slice and serveTransfer the quesadillas to a cutting board and let them rest for 1 minute. Cut each quesadilla into 3 triangles. Serve hot with a side of plain yogurt for dipping and garnish with additional fresh cilantro if desired.
