  1. Prepare the wonton cups
    Preheat oven to 375°F (190°C). Lightly brush both sides of each wonton wrapper with oil. Press wrappers into a mini muffin tin to create cups. Bake for 8-10 minutes until golden and crisp. Remove from the tin and let cool on a wire rack.
  2. Make the filling base
    Heat 2 tablespoons oil in a large skillet over medium heat. Add cumin seeds and let them sizzle for 30 seconds. Add the diced onion and sauté until translucent, about 3-4 minutes. Add garlic and ginger, cooking for another minute until fragrant.
  3. Add the vegetables
    Add the diced potatoes and peas to the skillet. Stir to combine with the onion mixture.
  4. Season the filling
    Add ground coriander, garam masala, turmeric, red chili powder, and salt. Mix well to ensure all the potatoes are coated with the spices. Cook for 3-4 minutes, stirring occasionally.
  5. Finish the filling
    Remove the skillet from heat. Add the chopped cilantro and lemon juice. Stir well to combine. Gently mash some of the potatoes with the back of your spoon while leaving some chunks for texture.
  6. Fill the wonton cups
    Once the filling has cooled slightly, carefully spoon it into the baked wonton cups. Fill each cup generously but avoid overfilling to prevent breakage.
  7. Serve
    Arrange the filled samosa cups on a serving platter. Garnish with additional cilantro if desired. Serve warm with mint chutney or tamarind sauce.
