  1. Prepare the tortillas
    Lay out 4 tortillas on a clean work surface. Brush each lightly with olive oil on one side. This will be the outside of your quesadilla.
  2. Add the cheese base
    Sprinkle about 1/4 cup of mozzarella cheese evenly over the non-oiled side of each tortilla. This first layer of cheese helps everything stick together.
  3. Layer the fillings
    Arrange tomato slices over the cheese, slightly overlapping. Sprinkle minced garlic, oregano, salt, and pepper over the tomatoes. Add torn basil leaves and a light sprinkle of red pepper flakes if using. Finish with another 1/4 cup of mozzarella and a tablespoon of Parmesan on each quesadilla.
  4. Complete the quesadillas
    Place the remaining tortillas on top of the filled ones, oiled side facing up. Press down gently to seal.
  5. Cook the quesadillas
    Heat a large skillet over medium heat. When hot, carefully transfer one quesadilla to the pan. Cook for 2-3 minutes until golden brown, then flip and cook for another 2-3 minutes until cheese is fully melted and the second side is golden. Repeat with remaining quesadillas.
  6. Serve
    Transfer cooked quesadillas to a cutting board. Let rest for 1 minute, then cut each into quarters. Serve immediately with warm marinara sauce for dipping if desired.
