  1. Marinate the beef
    In a large bowl, combine soy sauce, brown sugar, sesame oil, gochujang paste, minced garlic, grated ginger, and rice vinegar. Add the thinly sliced beef and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  2. Cook the bulgogi beef
    Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated beef in a single layer (cook in batches if necessary) and cook for 3-4 minutes until browned and caramelized. Remove from heat and roughly chop the beef into smaller pieces.
  3. Prepare the filling components
    In a small bowl, combine the chopped kimchi, sliced green onions, and chopped cilantro. Set aside. Have your shredded cheese ready in a separate bowl.
  4. Assemble the quesadillas
    Lay out 4 tortillas on a clean surface. Sprinkle each with about 1/3 cup of shredded cheese, covering half of each tortilla. Top the cheese with a quarter of the cooked bulgogi beef. Add a quarter of the kimchi mixture on top of the beef. Sprinkle another 1/3 cup of cheese over each portion. Fold the empty half of each tortilla over the filled half to create a half-moon shape.
  5. Cook the quesadillas
    Heat the remaining tablespoon of oil in a large skillet over medium heat. Working with one or two quesadillas at a time (depending on the size of your skillet), cook for 2-3 minutes per side until golden brown and crispy, and the cheese is fully melted. Transfer to a cutting board.
  6. Serve
    Allow quesadillas to cool for 1-2 minutes, then cut each into 3 triangles. Serve immediately with optional sides like sour cream, guacamole, or additional gochujang sauce for dipping.
