  1. Prepare the sauce
    In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, and gochujang until well combined. Set aside.
  2. Cook the beef
    Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes. Drain excess fat if necessary.
  3. Add the sauce
    Pour the prepared sauce over the cooked beef and stir to coat evenly. Reduce heat to medium-low and simmer for 3-4 minutes, allowing the flavors to meld together. Remove from heat.
  4. Prepare vegetables
    While the beef is cooking, prepare your vegetable toppings. Julienne the carrots, slice the cucumber, chop the kimchi if using, and slice the green onions.
  5. Arrange serving platter
    Arrange the washed lettuce leaves on a large serving platter. Place the cooked beef in a serving bowl and arrange all the vegetable toppings in separate small bowls.
  6. Assemble and serve
    To serve, let each person take a lettuce leaf, add a spoonful of the beef mixture, and top with their choice of vegetables. Sprinkle with toasted sesame seeds before wrapping the lettuce leaf around the fillings and enjoying.
